Orange, Cranberry & Almond Mince Pies. 

 Makes 24.

200g fridge-cold butter     grated zest 2 Oranges     

 400g plain flour            juice of 1 Orange                           

100g ground almonds         600g good mincemeat   

100g caster sugar           100g dried Cranberries 

 

Method: Heat oven to 180.Gas 6.                          

Whizz butter, flour & almonds until fine crumb, pulse in sugar    

& half orange zest, add juice of 1 orange & pulse to rough dough.

Chill for 15 mins if you have time, roll out to fit bun tins. Mix

mincemeat with orange zest & cranberries, spoon into pastry cases.

Roll out pastry again & cut tops. Bake for 18-20 mins.

Tips:  

Can be chilled in tins for a couple of days & then baked.

Can be frozen in tins for 1 month, defrost & bake.

Sprinkle with flaked almonds instead of pastry topper.

Stir the zest of an orange into 200ml of creme fraiche to serve.
